Delicious pancakes with raspberries and mascarpone cream



Today I am not going to write a lot…as delicious pancakes with raspberries are waiting.



Ingredients for pancakes:
3 large eggs
2 glasses of milk
2 and ½ glass of flour
1 glass of water
1/2 tablespoon salt
40g vanilla sugar
a little drop of sunflower oil
sunflower oil to fry


Method:
  1. Mix all ingredients together and store in a jar.Cover and refrigerate for at least 30 minutes. 
  2. Fry the pancakes on the frying pan brushed lightly with oil.



Ingredients for mascarpone cream:


 3 egg yolks
120 g fine sugar or granulated sugar
250 ml thick cream 18%
180 g mascarpone cheese
1 tablespoon lemon juice
1 jar of raspberries

Method:

1. Whip egg yolks with sugar till white, add the mascarpone cheese 
 already mixed with cream and lemon juice and mix everything gently with a spoon. 
                             2. For each pancake spreadable after about 2 tablespoons of cream and 1 tablespoon of raspberries, made ​​into triangles and serve.

Why we should eat raspberries?





Raspberries. Raspberries are very aromatic fruits and we can taste them all year round right now but the best are during the summer season.
They are very valuable source of minerals, vitamins and many other substances which are essential for our health.
They are also recommended for weight loss treatments. The fiber contained in them, regulates the work of the digestive system, purges and helps with constipation. Wath’s more raspberries contain water which absorbed in the gastrointestinal tract, swell, and thus fills the stomach and reduces feelings of hunger.
Raspberries contain antioxidants such as polyphenols, which  protect against disease and prevent skin aging. There are also a source of vitamins A, C, E, which are also antioxidants, and vitamin K, PP and B.
Raspberries conceal minerals like potassium, magnesium and iron, which protect the heart, lower blood pressure, reduce the risk of atherosclerosis . Potassium also regulates kidney function. Included in these fruits ellagowy acid protects against cancer. It also has antibacterial and antiviral properties.
We also know that raspberry juice is recommended for colds. This is because salicylic acid, which is diaphoretic properties and essential oils, acting as an antiseptic and warming.





The nutrients content in raspberries
100g raspberries contain 33kcal, 1.3g protein, 0.3 grams of fat and about 12g of carbohydrates of which fiber is up to 6.7 g

Raspberries are a rich source of vitamin C (about 31mg), vitamin B3, folic acid, potassium, zinc and manganese.


Therapeutic characteristics:
- Vitamin C and folic acid are essential for the body antioxidants
- Raspberries are the properties of the diastolic
- Relieve menstrual cramps
- Thanks to a high-fiber foods  prevent cancer of the colon, prostate and pancreas
- Contain substances similar to aspirin, and therefore an anti-inflammatory and analgesic
- Reduce fever


Effect which raspberries have for slimming
Eating raspberries is an effective way to cleanse the digestive tract of underlying undigested debris. The tiny seeds found in raspberries are not digested by the human body, but are extremely effective means to get rid of many toxins from the body. After treatment raspberry definitely feel a surge of energy, we see improved digestion and better overall mood.

Thai Fried Noodles With Chicken


This week I am continuing to prepare Thai dishes….

 

Thai Fried noodles with chicken

Ingredients:


300g dried noodles
4-5 tablespoons sunflower oil
3-4 garlic gloves, finely chopped
500 g skinless chicken fillets, finely sliced
4 large eggs
2 carrots, cut into matchsticks
200 g mixed mashrooms
4-5 tablespoons fish sauce
2 tablespoons soy sauce
4 tablespoons tomato ketchup
5 tablespoons lime juice
1 tablespoon sugar
¼ tablespoon chilli powder
4 tablespoons preserved turnip, finely chopped
6 tablespoons roasted peanuts, roughly chopped
300g bean sprouts
2-3 spring onions, cut into 2.5cm pieces
slices of red chilli, to garnish
coriander leaves, to garnish


Method:


  1. Cook the noodles in boiling water according to packet instruction. Drain and stir with two tablespoons of soy sauce
  2. Heat the oil in the wok and stir fry the garlic over a medium heat for 1-2 minutes or until lightly browned. Add chicken and cook for 5-6 minutes until cooked. Remove and set aside.
  3. Add oil to the wok. Add eggs and stir to crumble for 2-3 minutes. If necessary add more oil, noodles, carrots and mushrooms and stir fry for 3-4 minutes.
  4. Add fish sauce, tomatoe ketchup, lime juice, sugar, chilli powder, preserved turnip and chicken.
  5. Add  half the peanuts and bean sprouts and all the spring onions. Toss together.
  6. Taste and adjust the seasoning
  7. Spoon onto a serving plate sprinkle the remaining peanuts and garnish with a few coriander leaves and chilli slices.


It can be  really hot but very very tasty!!!

Thailand on plate. Tom Kha Gai coconut chicken soup



I’ve discovered thai cuisine during my trip to Thailand.
It’ s something incredible and the most delicious cuisine I’ve ever tried.
Coming back from Thailand I’ve bought cooking book with recepies I can prepare at home.
Almost all thai dishes smell with fresh herbs and spices. I love lime’s, lemon grass’, ginger’s, galangal’s, kaffir lime leaves’, garlic’s coriander’s smell.
Together with chilli papers, coconut milk, soy sauce, fish sauce all these ingredients make thai dishes incredible aromatic and tasty.
Thailand smells with food, food is everywhere, on every corner of the street. Food is cooked on the streets and the smell of spices and lemon grass is in the air.
Thailand is real heaven for everyone who likes discovering new tastes, new cuisine, new herbs etc.
My small cooking book bought there helps me to recall the wonderful time in Thailand, these incredible tastes and smells. What is more it is not difficult to prepare the thai dishes. Buy wok, buy spices, coconut milk, maybe some exotic fruit, chicken, and in very short time you will be smell and taste the Thailand in your home wherever you are.

I almost never eat soups I don’t like them but In Thailand soup was one of my favourite dish.
Tom Kha Gai one of the most popular and famous thai dishes. Thai coconut soup with chicken.
Easy and quick to prepare, all ingredients are easy to be fund In the supermarkets and it tastes almost the same creamy, aromatic a little bit sweat and spicy. Almost the same as I think that specialities from particular country will never taste the same when not prepared in the country they origin.
Tom Kha Gai Recipe (Thai coconut soup with chicken)







Ingredients:


400ml can coconut milk
425 g skinless chicken fillets, finely sliced
2 stalks lemon grass, bruised, sliced diagonally
2 shallots, cut in half or four
200 g mixed mashrooms
4-6 cherry tomatoes
10 black peppercorns, crushed
2 tablespoons brown sugar or honey
400 ml water
6-10  kaffir lime leaves torn in half
6 pieces of  galangal 5cm, thinly scraped, finely sliced
2 chilli papers
3 tablespoon fish sauce
2 tablespoon lime juice
coriander leaves, to garnish



Method:

  1. Put the coconut milk, water, lemon grass, galangal, shallots and peppercorns in a saucepan over a medium heat and bring to the boil
  2. Add the chicken, fish sauce and sugar or honey and simmer, stirring constantly for 4-5 minutes or until the chicken is cooked
  3. Cut the mushrooms in half if large and add to the saucepan and simmer for another 2-3 minutes.
  4. Add lime juice, kaffir lime leaves and chillies. Taste and adjust the seasoning – it is not a dish to be overhelmingly hot, but to have a sweet, salty and sour taste
  5. Add the cherry tomatoes in the last few seconds, taking care not to let them lose their shape.
  6. Spoon into a serving bowl and garnish with a few coriander leaves.
  7. You can serve it with jasmine rice on separate plate

Coffee and travel

I like coffee and one cup of coffee can make my day... Especialy on Sunday morning:)

Smell of the coffee is the best thing which can make you get up in the morning during the week, help you when you are tired and it is essential elemnt of  lovely afetrnoon in lovely cafe. Especially I like small stylish cafes which not only serve coffee but which have special climate and atmosfere.

I like observe how people drink and serve coffee in different parts of the world. While traveling I see that everywhere it is served in diffrent way in different mugs, cups and it taste differently.

Dream Kitchen



Kitchen is a magic place in the home. This is a centre of it. This is a place where we can cook, talk, spend time around the table with our family and friends. This is a place which smell freshly prepared dinner when the loves one come back to home, the place full of herbs, sweets and baking cakes.

Greek salad


The most simple and the most famus salad in the world. Will be perfect side during the grill and party. Greek salad the best in summer season when we can get the best tomatoes and cucumbers. In Greece is served everywhere in any café far away in villages and in hotels full of turists.
The most simple the better it tastes.
You do not need to be culinary talented to do it. What you need is fresh vegetables, feta cheese, good quality extra vergin olive oil, salt and oregano.

Greek salad
Ingredients:
       3 large tomatoes
1 cucumber
1 red onions
200g feta cheese
1 cup of black olives (Greek Kalamata olives are the best one)
salt
2 tbsp oregano
lemon
4 tbsp olive oil

 
Method:

  1. Cut tomatoes and cucumber into quite large pieces
  2. Peel onion, cut into half and cut into thin slices.
  3. Add olives and mix everything
  4. Add cut into cubes feta cheese
  5. Sprinkle with oregano, olive oile and squeezed lemon and mix.

Tasty treat for all fans of white wine and sophisticated tastes


Romantic supper will be ideal with risotto in white wine with chicken and mushrooms To this a glass of white wine…  Lets discover the secrets of cooking this dish.


 

The secret of every risotto is of course rice. Little Misss Spoon uses Gallo Arborio Rice. To get the perfect flavour to her risotto she added good quality withe wine -white Merlot wine and of course butter to make  dish velvety and creamy.

So pour a glass of good white wine and prepare risotto.



Risotto with chicken and mushrooms

Ingredients:
       400g/14oz arborio risotto rice
glasses of white wine
1 litre hot vegetable stock
2 onions, sliced
300g mushrooms
2 chicken breasts
2 cloves of garlic
salt and freshly ground black pepper
1 tbsp butter
1 tbsp chopped fresh basil
1 tbsp chopped fresh thyme
1 tbsp chopped fresh parsley
olive oil, for frying


Method:

  1. Cut the chicken breasts into pieces and season well with salt and freshly ground black pepper, and thyme. Heat the oil in a frying pan and place the chicken breasts. Fry the chicken breasts on both sides until lightly browned.
  2. In the other pot fry mushrooms with 1 onion. Season with salt and pepper as well.  When mushrooms will be ready sprinkle with parsley.
3.      The next step is heat the oil in a pan and fry the onion until soft add garlic. Add the rice and stir well, then add the wine and simmer until reduced completely. Add a good ladleful of the hot stock and stir continuously. When all this has been absorbed, add more stock. Continue adding more stock, stirring continuously, until the rice is cooked. Then season with basil
  1. When the rice is soft add a bit of cold butter. Thanks to it our dish will become velvety.
  2. Add the chicken and mushrooms, mix everything and season to taste.
6.      To serve, place the risotto into serving bowls and sprinkle with parsley. Add some salads as a side.

Why we should eat grapefruits? Do grapefruits help us to becoming slimmer?




Vitamin C
Undoubtedly one of the greatest benefits of citrus fruit is high in vitamin C. The quantity of vitamin C in one grapefruit is sufficient to meet the daily needs of the human body for this component. you do not be worry to eat them.

You are on diet and you want to loss some weight 
One grapefruit provide about 100 kcal. It is worth to say that all citrus fruits especially grapefruit have a low glycemic index, and therefore do not cause spikes in glucose levels, and do not cause a faster feeling of hungry.

Dietary fiber and antioxidants 
Grapefruits contain significant amounts of precious fiber, which has a positive impact on the work of the digestive system. The antioxidants they contain, lower cholesterol and triglycerides in the blood, enhance immunity, protect DNA from damage. They have antimicrobial activity and anti-inflammatory, reduce the risk of cardiovascular disease and certain cancers, and even neurodegenerative diseases (like Alzheimer's disease).



Grapefruits have detoxifying effects 
Another advantage of grapefruits is their detoxifying effects. The sour taste of citrus is associated with the current citric acid in them. It has been proved that regular consumption of grapefruit, protects against kidney stones. Citric acid along with vitamin C increases iron absorption. Therefore, grapefruit juice is the perfect drink with meals. But they should not be used for drinking when you swallow some medicines. Acidic and antioxidants in them may interact with certain drugs and potentiate or weaken the effects of medications.

Frittata… Dinner or supper for everyone


Do you like Frittata?
Frittata is very easy and not complicated dish to prepared. So if you are busy, have a lot of work and you don’t want to spend all the evening in the kitchen fittata is perfect.
It’s also healthy and you can add to it whatever you like. If you only have eggs and a lot of herbs you can always prepare it.
I  love it and it is my version of this delicious dinner or supper….

Frittata with pepperoni, mozzarella and potatoes

Ingredients:
6 eggs
2 tablespoon of butter
1 onion
1 and 1/2 paper – red, yellow, green
a little bit of chilli
70 g pepperoni
4 boiled medium potatoes
 125 g mozzarella chopped  in small pieces
1/3 cup of grated Parmesan cheese  ,
salt and paper






 Method:


  1. Heat the butter on the medium size frying pan,  add chopped onion and fry it for about 3-4 minutes, add chopped paper and chilli, salt and fry everything for next 7 minutes stirring from time to time.
  2. When the paper will be tender add chopped pepperoni, fry this for a while and add chopped potatoes and mozzarella. Fry it for 1-2 minutes.
  3. Beat the eggs in a bowl with salt and paper and add them to the frying pan. Fry everything for about 5 minutes on medium heat and from time to time moving frying pan but not stirring until the frittata is set underneath and golden.
  4. Put frittata to preheat oven for few minutes and all the time control it if is set on top.
  5. When it is ready remove it from the oven, sprinkle with grated parmesan and parsley.

Why do you need the next blog about health, beauty and food? Why do you need Miss Spoon?

Just because I will give you some cooking recipes, some diets tips, some information about healthy lifestyle, some about beauty caring about ourselves, some about cosmetics, some about sport and fittness, some funny stories around the kitchen and  shows you some parts of the world. Everything with pleasure and with a little passion, greediness and imagination.
I want to show you dishes easy and quick to prepare, not very expensive as she doesn’t want to ruin your budget and that you could always buy necessary ingredients.
As I am  crazy about healthy eating she will say about diets, fruits, vegetables, low fat etc. but  I can’t promise it will be always healthy and low calories. Who likes all the times eating only green salads and vegetables? I also like chocolate and a little bit sweets.
It will be different kind of kitchen from different parts of the world as it is what I like the best- visiting new places tasting something new and after that prepare it in my flat.
I will try that everyone find here something for themselves and for their close friends, families, the love ones.
